Cinn-a-doodle Biscotti


2 cups Sifted All Purpose Flour

1 Egg

1 Egg yolk (save white)

1 ½ tsp Cinnamon

¼ tsp Salt (or rather, a pinch)

1 cup Sugar

1 tsp Baking Powder

6 tbsp Butter (the better the butter the better the biscotti!)

1 tbsp Maple Syrup (optional)

1 tsp Vanilla (use anise, orange, or almond extract to maker a flavourful twist!)

 

Pre-heat the oven to 315°F.  In a large bowl, sift together the baking powder, flour, and salt.  In a smaller bowl, use an electric mixer to cream the sugar and butter.  Add the egg yolk and whole egg, and the extract and mix well.  Mix the wet ingredients in to the large bowl of dry ingredients.  This is going to make a sticky, crumbly dough, which is perfectly normal!  Next, roll the dough onto a floured surface, forming two equal balls.  Make each into a log no shorter than 8 inches.  Place on either a greased and floured pan, or parchment paper, or even better, a silicon mat.  Brush with the saved egg white and bake for 40-50 minutes. 

Remove from oven and place on a separate pan to chill.  Leave the oven on!  After a 10 minute cool down, slice no more than ½ inch thick slices, at an angle, and place back onto the pan used for baking, cut side down.  Sprinkle these with a cinnamon sugar blend and bake for an additional 15 minutes.  Transfer yet again onto a cold plate, and let chill! 

This is incredibly good with coffee or tea, or as a plain-Jane cookie!  Enjoy!!!!!
