Bacon Breakfast Quesadilla

 

(Recipe per serving)

2 strips of Cooked Bacon (Soy Bacon is a great substitute for Veggies!)

2 Tortillas

2 Green Onions (Chives) chopped

½ cup Shredded Cheese (recommended cheddar jack or Mexican blend)

1 tsp Taco Seasoning

2 Tbsp Sour Cream

Pinch Garlic Powder

1 Fried Egg

Pinch Black Pepper

Hot Sauce (optional)

 

In a separate skillet, Fry egg to desired consistency, and sprinkle with garlic powder and pinch black pepper.  Meanwhile, in a large skillet, heat oil over medium heat.  Place one tortilla into the skillet, topping with shredded cheese and optional hot sauce (to desired heat level) and top with second tortilla.  TO press, place a smaller skillet over and press with a heavy object (place a canned good in cold, smaller skillet—works like a charm!).  Mix sour cream and taco seasoning in a small bowl. Flip tortilla to brown other side – cooking for 2 minutes over medium heat.  Remove tortilla and plate.  Place fried egg over the tortilla, dollop with taco sour cream, place the 2 strips of bacon over, and sprinkle chopped green onions.

 

Mix it up!  Add Mushrooms, Bell Peppers, and your favourite veggies to replace bacon.  Sauté and serve over sour cream or toast inside the tortillas!  Simply delicious and mega cheap!
